Is it possible to adjust the speed of a rotating gobo by utilizing a speed slider or fader of some sort? I would love to be able to add one "gobo rotate" button to my Live board and then be able to control the speed of the rotation by a slider or fader.

The speed (slider and Master Fader) is to adjust the speed of a running scene.
The gobo rotate speed is usually controlled by one channel, so we suggest you to use a button with the option "Fader slider".

After doing some research and watching one of Darren Field's videos on midi, it looks like I could assign the fader on an external midi controller to the gobo rotate channel and control the speed of rotation that way. The issue I'm having is that the video where he describes this is an older video and the preferences menu has since changed. (video link below) He gets into this around the 16:00 mark. I'm trying to find the "MIDI and DMX patch" button that he references, but I don't see it anywhere. Can you help explain how I would do this in V8?
